What inspired you to take a leap of faith in purchasing a coffee farm in Hawaii through Craigslist? Could you share that moment of decision with us?

I think it was a combination of desire, gut feel, and perhaps faith in our capability. That, along with nothing else to lose that contributed to the decision.

Turning a struggling farm into a successful business must have been quite the journey. Can you share some of the biggest challenges you faced and how you overcame them?

There are a range of challenges. First, farming takes a lot of time and the feedback loop isn't quite as fast and easy to gain and glean information. In some of our learning periods it would take an entire year until the crop matured to learn from techniques we were testing.

Another struggle was gathering information and trying to figure out what information you can use and what not, and how to discern what to trust.

For example, one time we were told to get rid of the yellow cherry trees because those ones are no good, and we kept it.We honey processed those yellow cherries and they turned into a honey Yellow Catura which we got a high coffee review. And it continues to be one of my favorite coffees today.

Can you take us back to the moment you learned your coffee scored a 93 from Coffee Review and won the Grand Champion award? What did that moment mean for Big Island Coffee Roasters?

The coffee that one was different from the coffee that scored a 93.

The coffee that won was our Puna Pink Bourbon. Every year we submitted our coffee to the statewide cupping competition really just to see how we were doing. It was a chance for us to get professional reviewers and Q graders to score our coffee. We never really expected to win, we just hoped that we were doing better.

When our friend, Sean Steinman, call to give us the news Brandon was actually camped out in our van waiting for the best vendor booth spot for Maku’u Farmer’s market - which is just what we had to do every weekend for our farmer’s market circuit back then. Anyways, when we won the Overall Grand Champion that year I called Brandon and told him, “come home, we don’t have to do that anymore!”. We celebrated for a little while and as the news got around we were able to leverage that award and the press from it to get more sales. It was a moment of confidence of like, okay, we're doing this right.

When we earned 93 with coffee review, initially the coffee reviewer was skeptical and he thought that we had counterfeited our coffee because he hadn't tasted a Hawaiian coffee like that before. So he asked us to send him green coffee. And so we did and he looked it over and confirmed our 93 points.

Farming on an active volcano in Puna sounds extraordinary. How do the volcanic soil and environment impact your coffee's flavor profile?

Volcanic matter has a lot of sulfur in it, and sulfur is a fundamental component and an important component of a lot of aromatic compounds.

This is how we would explain the explosive aromas that we would get from our coffee and, and why we thought that it was so different and so much more intense than other coffees that we were smelling and tasting.

What led you to choose Red Katura, Yellow Kature, and Red Kazuma for your farm, and what makes these varieties stand out?

We didn't actually choose to plan to get any of them. They were already there from the previous owner. We only sorted, separated and marketed, roasted them differently and create, created different products with each.

So Puna Kazumura was just our blend. Yellow Katura was our Honey Yellow Katura coffee that got a 94 with coffee review.

You've been instrumental in changing the narrative around Hawaiian coffee. What do you think were the key factors that contributed to this shift?

That's very flattering. I think that key factor initially was that we really did think that Hawaiian coffees were terrible. We were just happy to learn how to farm coffee and roast and homestead.

And so I think the moment that began to show shift is when we realized it wasn't bad. It was a handling that was bad. And that there were a lot of different coffees that when handled handled well, they tasted different and reminded us of the wines of Willamette Valley in their distinction and their elegance.

We were all deeply moved by the tragic events in Lāhainā this past August. How have these events influenced your operations and relationships with coffee suppliers? Additionally, could you share any specific changes or challenges in your production process that have arisen as a result?

Yeah, this is a big one. One of the the largest farm in Maui, Maui Grown Coffee, was deeply affected by the fires. We don't know if they will return or when they will return, but they were our greatest single source of coffee.

Because they're mechanically harvested, they're more affordable than a lot of the Hawaii Island and Big Island coffees. So, them being essentially eliminated from the industry has affected supply, it's affected pricing, and it's affected our willingness to do blends. We’re still in the middle of trying to problem solve how to shift our product arrays around so that they are less dependent on Maui coffees but we're not the only people in this situation. It's all very devastating to the Hawaii coffee industry to have lost that farm and that operation.

Your dedication to sustainability is impressive, particularly with investing over $6 million into local family farms and your commitment to using 100% renewable electrical energy. Can you share how these significant contributions align with the core values of Big Island Coffee Roasters and the impact they have had on the local farming community?

This is truly a core value of Brandon and I that I always pictured myself as a conservation biologist or working for the Forest Service and not doing what I'm doing. We can't separate ourselves from a deep rooted care in the planet in the wild and beautiful places of Hawaii and of everywhere.

The impact has been that it has allowed farmers to continue farming. So we are trying to help people keep their land and to keep farming on it, that it's not always perfect because sometimes farming is messy.  Ultimately we’re always working with farmers to help them reduce the amount of harmful inputs and infrastructure.

By using 100% renewable electrical energy, you've prevented the emission of over 29 tons of CO2, an impact comparable to the carbon sequestration of 33 acres of forest in a year. How do you believe this significant achievement could influence environmental sustainability practices in the wider global coffee industry?

I would hope that they would influence the wider industry. I really have no idea. While I think that there is some motivation to influence there's also just doing what you can and when you can because it's part of your values.

What advice would you give to someone looking to enter the world of coffee farming, particularly in unique environments like Hawaii?

Just focus initially on being a really good farmer and being a really good processor and creating interesting coffees, that is really the first step.

There is some interesting research on the economy of coffee and what the research has shown is that there are only two primary ways of making money in coffee.

One is you have a small farm and you have a family and keep all of your labor costs in-house/ in-family. And the other is that you have a huge farm and an economy of scale like, 20 acres, 50 acres, 100 acres to make a living for you and your employees and your team.

Businesses in the middle and farms in the middle of those two have a really hard time surviving.

What message or experience do you hope people take away when they sip a cup of your coffee?

I wish I could take everybody out to a farm and have them harvest, process, and roast just one pound so they could see how much work is involved. It takes most people over an hour to harvest 8 pounds of coffee cherry which will end up yielding only 1 pound of roasted coffee. So I'd like them to recognize that there have been hands involved in every step of this process. There's just a lot of work and a lot of different people involved in every step of the process. So I think appreciating the flavor, appreciating that it's genuinely handcrafted and then taking a moment to experience the nuance in, from one coffee to another.

Coffee Cake with Streusel Topping

Ingredients

Ingredients for the Cake

  • 1 ½ cups all-purpose flour
  • 1 ½ tsp baking powder
  • ½ tsp baking soda
  • ½ tsp salt
  • ½ cup unsalted butter softened to room temperature
  • ¾ cup granulated sugar
  • 2 large eggs, room temperature
  • ½ cup brewed Steeped Coffee, cooled to room temperature
  • ¼ cup buttermilk
  • 1 tsp vanilla extract

Ingredients for Streusel Topping

  • ½ cup all-purpose flour
  • ¼ cup granulated sugar
  • ¼ cup brown sugar
  • ½ tsp ground cinnamon
  • ¼ cup unsalted butter, melted

Ingredients for the Coffee Glaze

Instructions

  1. Preheat the oven to 350° F and grease a 9-inch round cake pan.
  2. Brew a cup (8oz) of Steeped by placing a Steeped Bag in a cup and gradually pour over 8 oz of hot filtered water per bag. Dunk the bag for 15-30 seconds or longer for added strength. Brew for 5+ min. Leave the Steeped Bag in the cup or until preferred taste. *We recommend using our California Blend for this recipe.
  3. In a medium bowl, whisk together the flour, baking powder, baking soda, and salt for the cake.
  4. In a large separate bowl, cream the butter and granulated sugar until light and fluffy. Add the eggs one at a time, mixing well after each addition. Then, mix in the brewed coffee, buttermilk, and vanilla extract.
  5. Gradually add the dry ingredients to the wet ingredients, mixing until just combined and pour the batter into the greased cake pan.
  6. In a separate bowl, prepare the streusel topping by combining the flour, granulated sugar, brown sugar, and cinnamon. Stir in the melted butter until the mixture is crumbly. Then sprinkle the streusel topping evenly over the cake batter. 
  7. Bake in the preheated oven for about 30-35 minutes or until a toothpick inserted into the center of the cake comes out clean.
  8. While the cake is cooling, prepare the coffee glaze by whisking together the powdered sugar and brewed coffee. Adjust the consistency by adding more coffee if needed.
  9. Once the cake has cooled down, drizzle the coffee glaze over the top of your cake and enjoy!!

Ruby Coffee Roasters

We interviewed Ruby Coffee Roasters' founder, Jared.

Can you tell me about how you got started roasting coffee initially in your garage? What inspired you to take that leap?

I loved the idea of a rurally-based business that could have a little bit more breathing room to focus on quality and tell our story. I was inspired by a shift happening across the country with craft businesses opening in more unconventional places. Wisconsin is where I was raised so I was especially interested in contributing to the growing food and beverage culture here. Starting in the garage was more a necessity than a choice because my wife and I valued maintaining full control. The lower I could keep costs, the more I ensured our success with the launch.

You mention being guided by the idea of "responsible business that creates value for all involved." How do you put that philosophy into practice in your sourcing, roasting, and operations?

One of the keys to responsible business in our industry is developing strong partnerships with producers so that they know we will be a reliable customer for years to come. This stability allows producers to confidently invest in their production, improve systems, grow their business, support their local communities, and more.

When it comes to roasting, we focus on systems and consistency. The better our systems are, our team can have confidence in their success and accuracy and we can reduce the frequency of mistakes.

In our operations we try to create a workplace that minimizes stress and embraces growth and autonomy while working toward a common goal.

Our customers can trust that we’re going to deliver on our promise to provide them with consistently great, quality coffee that is roasted in a way to ensure easy brewing and a sweet cup.

Your slogan highlights "colorful coffees" that represent specific microclimates and moments in time. How do you go about selecting and sourcing coffees that capture this uniqueness?

We have several ‘color buckets’ that we look to fill on our menu throughout the year. For example, brown for heavier, chocolatey coffees and purple for juicy, berry-like ones. Certain sourcing projects of ours are more aligned with specific flavor profiles so we tentatively pencil in those lots. Then we finesse or modulate within these categories to help build a balanced menu with enough variety to our customers. We try to keep this range consistent while also celebrating seasonality and keeping a lineup of fresh arrivals.

What's the process like for developing your seasonal coffee menus? How often do these change and what factors go into selecting new coffees?

Much of our seasonal menu development is now sorting through various batches or lots from producers that we have been working with for several years. When harvests are strong, we ideally have multiple lots to choose from. As a growing company, we sometimes have room to establish new relationships as well. In that case, we will select coffees that add a new dimension to the menu. For example, this season two people from our team were able to visit producer partners in Costa Rica and brought in our first SL-28 offering from a new relationship there. Our single origin menu is basically constantly changing with limited releases.

How did you decide on Nelsonville as the location to scale up operations back in 2015? What made it a good fit for your expanding roastery?

Nelsonville was one of the closest towns to where we launched in 2013/14. Like other small towns nearby, it was really quiet and most businesses had closed. The days of village banks, markets, etc., had generally passed. I really liked the idea of helping to revitalize a small town while exploring the culture of rural WI, and maintaining that sense of open space and breathing room that we had when we first launched. It was a good fit because it had everything we needed: more storage space, room to expand, low overhead, close access to a post office, easier truck unloading, and more.

Can you share more about the renovation of your Nelsonville space? How did you design it to fit your brand and operations?

I think of our brand as being closely tied to authenticity so we design our spaces to be functional and simple. I don’t want things to be flashy or over the top because I want the focus to be on the coffee, the experience, the location. We first look at what makes a space unique and then we try to celebrate any historical assets as much as possible. One thing we try to add when possible is more natural light. There’s no denying how much good lighting improves a space.

What led you to open your first full café in Stevens Point in 2019? How does that location embody the Ruby brand?

Stevens Point is the hub of activity in Portage County and is about 20 mins west of our roastery. Like many cities of this size, a lot of commerce and culture moved away from the downtown over the past 20 years. We saw an opportunity to contribute to the revitalization and growth of the new downtown and we knew we wanted to be part of that. By 2019, our headquarters ‘tasting room’ had become pretty popular and we heard time and time again from people in Stevens Point that they’d love a spot to visit more frequently. The Point cafe represents a fun growth and expansion of the Ruby brand, where we’ve been able to ingrain ourselves more in the community, involve ourselves more in events, hire more staff, tell our story to more people that visit from near and far.

As you've grown from a garage start-up to a nationally distributed brand, what have been the biggest challenges and lessons learned along the way?

One of the biggest challenges with any business is finding people to build your team with as you scale up. I have been incredibly fortunate to have great people all along the way. I have had to learn how to be a better leader and coworker, including how to give people the space and trust to be successful. Another big challenge is just maintaining the brand’s vision and continuing to pursue quality at the highest level.

What's your vision for the future growth and evolution of Ruby Coffee Roasters in the next few years?

We’re so excited to continue supporting our customers big and small all across the country (and beyond). On the sourcing side, we’ll be adding some new origins to the menu that we can’t wait to share. Soon we’ll be opening our new headquarters cafe in Nelsonville as well. This space will feature some exclusive merch and coffee equipment so we hope it will become a bit of a destination for regional folks. Beyond that, lots of exciting refinements and some new projects that we’ll be sure to share on social media!

How does Ruby Coffee leverage Steeped’s innovative brewing method to create a unique coffee experience for your customers?

I will often highlight the value of having the grind and dose dialed in for a customer. People focus on the convenience, which is great, but it’s almost more valuable to give someone a properly ground, fresh, properly dosed coffee serving. Many people mess up too many variables at home all at once to understand the impact of any specific one. Steeped helps isolate several of those.

Could you share how integrating Steeped has contributed to Ruby Coffee’s growth and enhanced your business as a whole?

I believe Steeped helps convey the perception that Ruby is a really established company with good systems, good marketing, etc. Having that extra layer of professionalism is good for attracting customers of all sizes and scopes.

Small-town humility because they started and continue to thrive in a town of 432 people. Big employer energy because even though they're still relatively small, with 47 employees, they offer above-and-beyond benefits, like 100% coverage of health insurance premiums and onsite childcare. And being "successful" isn't what drives them - it's making an impact at home and wherever their coffee comes from or goes. From eco-friendly packaging to scholarships and free meals during COVID, see how the extremely approachable team at Red Rooster puts as much thought into who they work with as they put into their coffees.

Starting in a town with just 432 folks, Red Rooster Coffee has quite the origin story. Can you walk us through how this small-town gem grew into the coffee powerhouse it is today?

Calling Red Rooster a powerhouse is a bit generous! In many ways we are still the same small-town, family-run company we started as 13 years ago. We are still learning every day and concentrating on quality. That focus on quality and customer education are probably the keys to our success. Starting out in a small town meant that for the first year or two we had really personal interactions with all of our customers. This helped us hone our craft and pushed us to become experts in the field. This also led all of our staff to become very passionate and enthusiastic about coffee, which led to better quality and better customer education.
 
Your connection to the community is impressive. Can you share some heartwarming stories about how you've become an integral part of your small rural town?

Our community focus is always on finding some way to help the disenfranchised or the folks who need a leg up. One of our biggest projects was during Covid, when we started the Win/Win initiative to raise funds to make food for our local food pantry, Plenty. We took donations from our customers in $10 increments and turned that money into 6,000 ready to eat meals for the food pantry. In turn, we were able to keep our kitchen staff working during some really hard times. This year we started an annual college scholarship for local students who represent diverse or traditionally disenfranchised backgrounds. In light of recent cuts to the arts, we donated to the high school theater department and to the high school marching band. Each year we donate $1 per bag from our Thanksgiving blend (Grateful Coffee) to a charitable organization. Last year it was the Floyd Initiative for Safe Housing. This year we are giving to the local alternative elementary school, Blue Mountain. Our hope is to be able to focus our giving in specific arenas where it will do the most good in the areas where there is the most needed.
 
Sustainability is a core focus at Red Rooster. In addition to partnering with Steeped, what are some of the other eco-friendly initiatives you've embraced?

We think about sustainability in every step of our business. From biodegradable packaging solutions, to composting all food waste from our cafe, to recycling every piece of plastic in our facility, we spend a lot of time and energy focused on the environment. Our latest initiative, which is still in the nascent stages, is switching our coffee packaging to be made from Post Consumer Recyclables and developing a program to make it easy for customers to recycle their bags, thus creating a closed loop and cutting down on the use of virgin petroleum.

Sourcing responsibly seems to be a key ingredient in your coffee. Can you walk us through how you pick the perfect beans and what makes your sourcing process unique?

Sourcing coffee is a many-layered system which is only made more complex when you try to make sure that you are buying unique coffees, paying high premiums, and supporting sustainable agriculture at origin. We source coffee across several channels - for our Organic blends we mainly use cooperatives with many small holders. For our single origins, we mainly source coffees from several importers, as well as purchasing directly from the producers themselves. When sourcing these coffees, we look for quality, we look for a good relationship between the importer and the producer, and we typically will try to have long relationships and purchase from producers that we have purchased from in the past. Occasionally, if we get a truly great recommendation from an importer, we purchase a coffee without sampling first, but more often than not, we take a green sample, roast it and cup it for quality, then determine whether or not we have room in our line-up. I’d say our method of buying is somewhat unique in that we buy many small lots of coffee throughout the year, sometimes offering small quantities of 30 or more coffees in a year.
 
Behind every great brand, there's a great story. Can you share a memorable experience that reflects Red Rooster Coffee's impact, whether it's in your neighborhood or in a coffee farmer's life?

We’ve always made an effort to show up for our staff, and I think in general we punch above our weight in this department. I think this is probably the place where the culture of Red Rooster has the most direct impact. For example, we’re the only coffee company in the US with an onsite childcare facility and we subsidize most of that cost. We started offering 100% health insurance premium coverage in 2015 when we only had 5 employees and that continues today with 47 employees. And we just started a matching retirement account for all employees, part time and full time. I think every small employer would like to take better care of their staff, pay more, offer more benefits, and generally just try to create a place where people love to work. It’s probably the biggest challenge but it’s also the place where your efforts have the most impact.

Looking into the future, what's brewing at Red Rooster Coffee? Any exciting plans or projects on the horizon that we should keep an eye out for?

Several… but nothing we can talk about just yet. There will be a few really exciting new products rolling out in the near future, but until the ink is dry, we can’t divulge anything. :)

What You’ll Need:

  • 1 cup (8oz) of Steeped’s California Blend 
  • ½ cup of apple cider

  •  2 tablespoons of caramel sauce
  • ¼ teaspoons of ground cinnamon
  • Whipped cream (optional)
  • Cinnamon stick for garnish (optional)

Instructions:

  1. Brew a cup of Steeped’s California Blend Coffee. Place a Steeped Bag in a cup and gradually pour over 8 oz of hot water per bag. Dunk the bag for 15-30 seconds or longer for added strength. Steep for 5+ minutes or until preferred taste.
  2. In a small saucepan, heat the apple cider over medium heat until it’s warm but not boiling.
  3. In a separate small saucepan or microwave, heat the milk until it’s hot, but again, be careful not to boil. 
  4. In your favorite mug, add the caramel sauce and ground cinnamon.
  5. Pour the hot coffee over the caramel and cinnamon, and stir until well combined. 
  6. Add the warmed apple cider to the coffee mixture and continue to stir.
  7. Lastly, pour in the hot milk, stirring until everything is well combined. 
  8. If desired, top off your caramel apple cider latte with whipped cream and garnish with a cinnamon stick for the perfect fall touch.

Little did they know, this camping excursion would soon become an unforgettable adventure with a memorable guest!

Denise and her family were no strangers to camping and all the wildlife that comes with it; they made sure to clear their camp of any food or delicious-smelling items that would attract unwanted attention from the local creatures. In a quick turn of fate, Denise accidentally left behind a few surprises in her tent, including her beloved Steeped Packs, some instant coffee sticks, and a paperback novel. The dirty chai latte was born in the ‘90’s when a barista mistakenly added a shot of espresso to a customer’s chai latte order. Luckily for all of us dirty chai latte lovers, the patron’s curiosity and general relaxed nature took hold and instead of asking for a replacement, he took a sip of this new concoction! One sip led to another, and the craze was born. It was the perfect blend of the two loves, with the chai latte's sweetness and spice balanced by the espresso's boldness. It was a drink that was both invigorating and comforting, and it quickly became a favorite among coffee and tea lovers alike.

Now, let's celebrate this iconic blend with a special recipe! Steeped has created a delicious dirty chai latte recipe using your favorite Steeped Packs to honor National Chai Day. Grab your mugs and get ready to spice up your life!

Dirty Chai Latte

Steeped’s Dirty Chai Latte

Ingredients:

  • 1 chai bag
  • 1 cup (8oz) of hot brewed Steeped Coffee
  • 1/2 cup of milk or milk substitute
  • 1 tablespoon of honey (adjust to taste)
  • A pinch of ground cinnamon
  • A pinch of ground cardamom
  • A pinch of ground ginger
  • A pinch of ground cloves

Instructions:

  1. Brew a cup (8oz) of Steeped (we recommend using our Odyssey Blend or Mr. Espresso’s Seven Bridges for this recipe) by placing a Steeped Bag in a cup and gradually pouring over 8 oz of hot water. Dunk the bag for 15-30 seconds, or longer for added strength. Let the Bag immerse itself for 5+ min. Leave the Steeped Bag in the cup or until preferred taste. 
  2. Place a chai bag in your favorite cup and pour the hot brewed coffee over the top of the chai bag. 
  3. Allow the chai bag to immerse itself in the coffee for a few minutes to infuse the flavors.
  4. Remove the tea bag and stir in the honey until dissolved. 
  5. Heat the milk in a saucepan or microwave until hot but not boiling.
  6. Froth the hot milk until it becomes creamy and airy.
  7. Pour in the frothed milk, stirring gently to combine.

Klatch Coffee's Single-Serve Options

Could you take us back to the beginning of Klatch Coffee in 1993? What's the story that laid the foundation for this incredible journey?

(The following is a narrative from the Klatch Coffee website, which details the inspiration, and the early days, behind the company. We've included excerpts here, but encourage you to read the whole thing!)

In 1993, Mike Perry was 30 years old. He’d dropped out of college at 18 because he was working construction and enjoying it.

"At the time, I was making good money, sixteen bucks an hour back then,” Perry recalls. “Life was pretty good. I decided why not take a semester off.” Twelve years later he had a wife and two young girls and the proceeds of a successful construction company he’d just sold. Perry went back to school to study biochemical engineering, in part to set an example for his daughters, Heather and Holly. But he quickly realized, not working, that his money wasn’t going to last. He considered dropping out yet again.

Then Perry had another idea: coffee. With two young kids, Mike and Cindy didn’t have the time or energy to go to bars or nightclubs, so they had started going to coffee shops for weekly date nights. They loved the ambiance and would have a coffee or cappuccino and a dessert. So the thought occurred to them, “You know what? We could open up a coffee house....We love everything about it, and we think we could do a better job on the coffee.”

The Perrys decided to have it all: Mike would continue to pursue his engineering degree, but in the meanwhile, the Perrys would also engineer a new and better coffee house. As they considered what to name it, Cindy remembered her grandma getting together with her friends for a “coffee klatch", Dutch for coffee and conversation.

“That is what it was all about, having coffee, talking to friends,” Mike said. “And getting things going.”

Thus was born Klatch Coffee, and thus began a journey to some of the best coffee the world has ever known.

If you’ve ever been out and about, suddenly had an urge for coffee, and used your phone to help satisfy that urge, you know the gravitational force that drew Perrys in: “Coffee near me.”

The first Klatch coffee house opened in Rancho Cucamonga at the site of a former winery. Klatch was an immediate hit. Four years later, in 1997, just after Mike graduated with a degree in biochemical engineering from UC Riverside, Klatch opened up a second shop in San Dimas. One day around this time, Mike got what would prove to be a fateful call from a friend.

“Hey Mike, you are into coffee, right?” the call began. It turned out his friend had just bought a coffee roaster and didn’t know how to use it. He thought Mike might be able to figure it out.

“I don’t know if you know anything about engineers,” Mike said, recalling this moment. “But the problem with engineers is we can do anything.”

Mike went to the manufacturer of the roaster, in Idaho, to learn how to roast. But that wasn’t enough. “Kind of like teaching a chef how to use an oven,” he recalled. “Nice people, bless their hearts, but they don’t teach you how to roast. They just teach you how to use a machine.” So like any good engineer, he taught himself; Klatch Coffee became one of the first coffee houses to take the flavor of coffee to another level through the exactitude of scientific method.

“I ended up actually applying what I learned in school,” Mike said. “When I would roast I would document every single variable -- time, temperature, airflow, flame -- and write them all down. And I would taste it, just like a chef tasting his food, and based on how it tasted, I would go, 'Oh, I want to go a little bit lighter next time. Or I want to do it a little bit quicker.' I'd change a variable at a time.”

Klatch had taken its coffee more seriously since its beginnings, becoming one of the nation’s first “multi-roaster” coffee houses as Mike sought out the best beans and best roasters he could find. “The problem is all of them could do something right, but they couldn't get it all right,” he recalled. Roasting his own beans unlocked a new world of possibilities for excellence. Soon Klatch had purchased its own roaster, and soon the demand for Klatch’s beans extended beyond its coffee houses and into restaurants and other coffee shops.

Once Mike Perry launched his exploration into the coffee bean, it was game on. The scientist in him, combined with his natural affinity for all things coffee, meant the Klatch was among the first in the coffee industry to take the pursuit of taste to its highest level.

“Science combined with the artistry of taste,” Mike said. “We combined the two together.”

Improving roasting was only the beginning. “I wanted to get even better coffee, and I said, 'How can I get better coffee?'” Perry recalled. He realized that to further refine taste meant going to the source. On his first trip, to Costa Rica, he began to understand that two layers separated most coffee houses from control over the quality of their beans: first the importer, then the people in other countries representing growers.

“I'm buying one coffee,” Mike said. “But this guy where the mill is, he represented 100 different farmers. And they were all a little bit different.' And I started tasting it and thinking, 'Wow, there's other great coffee out there!' I realized at that point that to get better coffee I had to go to the source. And that's how we started our direct trade model of sourcing coffee.”

Mike has been circling the globe ever since. Before direct trade was a buzzword, Mike was living it. He went straight to the growers themselves. Klatch became one of the first artisanal coffee houses with its very own “green buyer,” as coffee hunters are known in the trade.

As Mike developed relationships with farmers the world over -- with monthly trips to areas in Africa, Central and South America, and Indonesia -- his knowledge extended from roasting to buying to the exact terrain and particular care exerted in each individual picking. He learned where the best coffee in the world was, down to the square hectare, and who was best at producing it.

“Coffee near me,” in this context, isn’t just about an internet search. It’s about a quest to understand every aspect of coffee, from soil to bean to cup, in order to make the best coffee possible. Mike Perry has taken this quest to its farthest-flung and most local extremes. He’s created a coffee company that offers to bring the best in all things coffee near you.

Mike says, "Now we are highlighting the varieties, the farmer, the specific micro-lot, where we are being able to tell that story. And people can taste the difference. That is the best part of it; it's not just marketing, it's not just a story -- it's really more about the taste.”

Family-owned and operated – it's a powerful concept! How do your individual roles and personalities harmonize to create the Klatch Coffee experience?

It took time to get to this point, but sometime in the last 30 years we figured it out. What allows us to harmonize, is we all have the same goal, we’re working towards the same mission which is providing great coffee through all avenues of our business.  We all have different interests and strengths which helps us to accomplish that.  Mike oversees the green buying and roasting, Holly the retail, and myself (Heather) the ecommerce and marketing.

Quality is clearly part of Klatch Coffee’s DNA. Can you walk us through how you source top-notch coffee beans and ensure they meet your standards?

This is where Mike and being a little smaller really sets us apart. The coffee and conversation that we talk about is not just with our customers, but starts with the relationships we build with the producers. I think what makes this industry so unique is so often when Mike is down cupping with a producer, there are always additional coffees on the tables, and they usually come from a producers friend, they wanted to share their coffee. And it is those opportunities that really give us the chance to share some unique coffees with our customers. When Mike goes to origin for coffee I describe him as a kid in a candy store, if he finds something he likes he buys it, regardless how the small the lot might be or how many other coffees we are already purchasing. This year we have 13 geishas! I think the variety that we provide allows us to provide a totally unique experience to our customers.

You talk about the "peak of flavor method." Could you break down what that means in practice and how it adds that exceptional touch to your coffee?

Peak of flavor method is what Mike created when he started roasting. There were no real classes or instructions at the time, so he created a three-step method: experiment, document, taste. It the taste piece that our peak of flavor is based on. On a cupping table a coffee can have so many beautiful flavors. How do we best roast that coffee to share all those flavors with who is going to be drinking that coffee?

In a family-led business, brainstorming must take on a whole new dimension. How do you collaborate creatively and make decisions that reflect each family member's input?

We really respect each other and let the person who is best for the job lead the conversation and support them as best we can.

Lifelong learning seems to be a core value at Klatch! How do you foster an environment of learning and growth within the company?

First off we never stop learning ourselves. We are constantly pushing ourselves to see what’s next, how we can be better, and what we should be doing differently. We also don’t teach everything at once. If you come to one of our retail stores, the first year is a learning journey. We don’t just teach coffee, we want people to walk away from their time at Klatch with life skills they can take to their next job, whatever that may be. We also make sure we are creating opportunity for learning and growth. For our 30th anniversary, we are having each of our seven stores create a drink that they will serve at our Coffee Crawl to celebrate our anniversary. There have been some amazing ideas and drinks put out there by our team so far, and I can’t wait to see what the final products are.

The History of Coffee Starting in the Verdant Forests of Ethiopia

It's here, amidst this lush landscape with young coffee seedlings, that our story begins with a goat herder named Kaldi. A simple man, Kaldi's days were spent tending to his flock, guiding them through the fertile highlands in search of fresh pastures.

One day, Kaldi noticed something peculiar. After eating berries from the young coffee plants, his goats displayed unusual energy. Instead of settling down for their usual evening rest, they seemed invigorated, prancing around and staying awake.

Intrigued by this strange phenomenon, Kaldi samples these mysterious berries himself. As he chewed on the small, ripe berries from the coffee tree, he felt a sudden surge of energy coursing through him, similar to what he'd seen in his goats.

Excited by his discovery, Kaldi gathered handfuls of these energizing berries and took them to his local monastery. He shared his experience with the monks, who were initially skeptical but decided to experiment with these berries.

They found that roasting ground coffee and brewing the whole roasted coffee berries together could create a dark, invigorating beverage that helped keep them alert during their long hours of prayer. The word quickly spread within the monastery, and other monks soon participated in this new coffee-consumption concoction.

CHANNEL YOUR INNER HEAT MISER

Convenience is the name of the game; the name of the game is convenience. Starting the campfire, keeping it going, and making sure sparks behave can be a real chore. You're probably used to the traditional method: starting with small sticks and flint at the bottom of a fire pit, and then throwing more logs on it as the night goes on. Effective, classic, but not nearly as convenient as it can be! Here’s a hot tip: learn how to construct an upside-down fire. It's exactly what it sounds like – a flipped version of the traditional fire, instead burning from the top and going down. Grab your largest logs and stack them in layers, back and forth in opposite directions – just like Jenga! Once you’ve reached a good enough height, add tinder and kindling to the top and start your fire. This simple method requires less wood, burns longer, and produces less smoke for a more effective and convenient campfire experience.

NATURE’S SCENT 

Depending on where you set up camp, a real shower, or even a warm one, might not be in the cards. For those of us who aren't ready to embrace our inner wildness when it comes to smells, shower wipes are going to be your best friend. Sometimes these go by different names depending on the company (wilderness wipes, shower sheets, no-rinse bathing wipes, you get the idea), but they all do the same job – keeping you smelling like lilacs! You can find these either online or at your local camping or adventure store  just make sure to pick a brand that's eco-friendly and won't harm the environment when you're done scrubbing!

CAMPSITE NESTING

Speaking of your campsite, give it a good look before you dive into your preparations. Despite this being a good safety tip, it can also influence your packing strategy! Check AllTrails, view it virtually on Google Earth, or talk to someone who’s been there before. Scout it out, get familiar with where things are, and you'll be all set for a smoother and safer camping experience!

Frothy Monkey Single-Serve

Tell us about Frothy Monkey's early days in that cozy 1200 square foot bungalow in the 12South neighborhood. How did this amazing coffee journey start?

The original Frothy Monkey was created to bring a neighborhood together. In the early days, our little bungalow house was just that - a house! It was small, simple, and relatively representative of the homes in the area at the time. We were one of the first businesses to set up shop on 12th Ave South in Nashville, now known as “12South”. The neighborhood was very different from the bustling area it is now. It was relatively quiet with lots of historic homes, middle class families, a few more churches, and small local hangs like a wine bar, a drum shop, and other long-gone ‘Old Nashville’ gems like Katy Kay’s Ranch Dressing. 

Our offerings were fairly typical of coffee houses in the early aughts. We served drip coffee, espresso drinks and pastries. It was a casual, cozy vibe created by locals’ and neighbors’ routine visits. The original goal, which still rings true nearly 20 years later, was to create a place where everyone was welcome and guests felt comfortable enough to hang out and connect with their friends and neighbors.

Frothy Monkey's evolution from a charming bungalow to a bustling hub with restaurants, a bakery, and roasting operations is impressive. Could you walk us through the journey of turning a small coffee spot into a thriving coffee brand?

A pivotal part of Frothy Monkey’s growth was Managing Partner Ryan Pruitt’s transition from an early employee to a manager. Pruitt started at Frothy Monkey as a part-time employee with a side hustle and quickly connected with regulars at the shop. After a few adventures in Europe traveling with his band (how Nashville!), Pruitt returned to Tennessee with a spark of inspiration from European cafes and transitioned into a management role. 

European cafe culture Pruitt experienced was mindful and relaxed. There was something for everyone. There’s beer for the afternoon, wine for the evening and coffee for a good conversation at any time. Add on some elevated food options…and now you have Frothy Monkey’s current All-Day Cafe model.

The ‘evolution’ started with losing the microwaves and improving food quality. Then improving coffee service and sourcing, and finally securing liquor licenses and expanding hours. Along the way, guests and neighbors connected Frothy with local farmers and purveyors to create relationships and growth for both businesses.

Frothy’s core values may not have been on paper in the early days, but then and now we’ve always strived for Quality, Warmth, Relationships, Grit, Execution, and Growth and Development. So, roasting our own coffee and baking our own bread allowed us to embrace all of these values and create products we knew we would be proud to serve our friends and neighbors.

Roasting your own beans was a game-changer. Can you give us insights into how you transitioned from partnering with another facility to launching Frothy Monkey Roasting Co. in Nashville?

In the early days we bought our coffee from local roasters, like many coffee shops and restaurants do. We set a goal to roast our own coffee once we had three cafe locations. Before we were ready to roast in-house, we were fortunate to work alongside friends with roasting experience to roast at their facility. 

Our first blend, now known as 12South blend, we used for all things coffee at Frothy Monkey. We dabbled in Single Origins and other featured coffees, but primarily everything from espresso to drip included 12South. 

In 2015 when we opened our third store in Downtown Nashville, it was time to meet our goal and roast in Nashville. Fortunately, we had friends who had roasting experience, and we partnered with them to roast at their facility and then eventually open up Frothy Monkey Roasting Co. in our hometown of Nashville, TN. We started by transitioning the 12South blend to our own roastery, mastered the production process, and then developed our first Signature Line of coffees - 12South, Brunch, French, and Unwind. 

At this point, we had our very own roaster “Helga” - a rebuilt 1950’s German Probat - and we were roasting at our first roastery space at the Ink Building in the SoBro/Pietown neighborhood in Nashville. We continued working with our friends to source green coffee, and expanded our roasting operations with the growth of Frothy Monkey cafes. 

The roasting company outgrew the Ink Building and established a new roastery location in South Nashville in 2020 (what a year!). We not only roast for our own cafes, but we’re operating wholesale “Happily Brewing” accounts with cafes, universities, hotels, restaurants, and bars across Middle Tennessee.
In 2022, the Signature Line had a long anticipated brand refresh and now includes six coffees - 12South, Brunch, Brute, Eventide, Midshift, and Howler. Now we’re sourcing our green coffee and roasting our own Roaster Series and Single Origins in Nashville.

The next expansion for Frothy Monkey Roasting Co, is an additional coffee roaster to increase our weekly production capacity, and continue to grow our business with innovative products like Steeped.

Despite all the growth, Frothy Monkey has held onto that warm neighborhood connection. How do you manage to maintain that local charm and engagement, no matter where you set up shop?

We carefully choose the neighborhoods where Frothy Monkey cafes open, which sets the tone for everything. When we consider a new location, there are lots of conversations around the community in the area, what neighbors might need to feel more connected, and how Frothy may fit into the existing fabric of the neighborhood.

Warmth and approachability are key. The buildings we consider are all preexisting, and often have a unique history.  We love reimagining the spaces we choose and filling them with a new sense of purpose. 

A big part of building and maintaining the community engagement is plugging into what’s already happening in the area. We love connecting with local community organizations, neighborhood associations, long-time residents, and even area historians to learn more about the community we’re joining. If we can enhance the neighborhood experience by providing a place to hang out, connect, and enjoy the company of friends and family, we’ve succeeded because it’s all about taking care of each other.

Whether it's Nashville or another location, Frothy Monkey maintains a consistent commitment to great coffee and local flavors. Can you share your secret for infusing each unique neighborhood with the same delicious thread?

It all circles back to relationships. There are a lot of folks behind-the-scenes and in the cafes making sure the quality of our products are consistent. Being physically present and dialed in to our team needs has a huge impact on how we can serve our guests. Our management team is passionate about making the Frothy experience feel “Frothy” whether you are visiting any of our cafes or roastery.

We invest in the community we serve and the people who serve. We want our team to feel supported and empowered. We encourage the team to be who they are and bring the fullness of their personality to the table, while empowering them with the product knowledge and service cycle we’ve created at Frothy. Our hospitality leadership is in our cafes weekly, helping to keep the team motivated, helping management with any issues, and getting face time with the people who do the work every day. 

The roasting company works in tandem with the retail cafes to educate all of our team about specialty coffee. Our coffee education and barista training team has a series of in-person training sessions to introduce and experience specialty coffee. If team members are baristas, or interested in becoming a barista, we have classes at the roasting company for them, as well.

In terms of the products that are consistent, our Chef and operations teams have direct relationships with the farmers and purveyors on our menu. Purveyors like Broadbent, KY Farm Fresh, Hatcher Family Dairy, High Garden Tea, and Firepot are in conversations with us routinely.

When we grow, it’s an opportunity for their growth. When we succeed, it’s their success, too. In new neighborhoods, we try to include new farmers and purveyors as well. Building the local relationships with producers highlights their products and connects guests with their community.

Ryan Pruitt's journey from coffeehouse staff to Managing Partner sounds fascinating. Could you share how he went from coffee enthusiast to the driving force behind Frothy Monkey's growth?

Ryan’s vision was to recreate the all-day cafes that he had experienced in Europe, where you can go at any time of day to meet up with a friend and feel taken care of. That feeling comes from how the spaces are designed, as well as having access to great coffee, a pint of beer or a glass of wine, and fantastic food paired with great people. The magic in our original 12South location is infectious and when you combine that with an eagerness to grow, it takes on a life of its own.

We're excited to meet the team that makes Frothy Monkey shine. Could you introduce us to the key players and share how each member is shaping Frothy Monkey's remarkable story?

There are so many people who have contributed to our story, but here are a few of the long-time contributors who have been there since the beginning. 

Ryan Pruitt - The visionary and our Managing Partner. He has taken Frothy Monkey from a cozy coffeehouse to an all-day cafe with eight locations, a coffee roastery, and artisan bakery.

Brittney Russler - The heart of our Hospitality. Britt joined Frothy Monkey when we opened our second location in Franklin, TN. She quickly became a key player in shaping the cafe experience, has grown with us by opening and managing every location since, and is now a member of our Executive Team.

Ryan Bledsoe - The guy who elevates our coffee program. “Bledsoe” is another long-time member of the Frothy team. He started as a barista in our cafes in 2013 and now leads our Roastery in Tech, product development, QC, and training.

Jennifer Sheets - The protector of the brand and head of marketing. Jenn has been with Frothy since 2012 and is one of the Partners. Whether working closely with Pruitt vetting new neighborhoods, designing coffee packaging with the roastery crew, community building, or telling Frothy’s story, she has played an integral role in growing the brand while staying true to the magic of that OG bungalow we all love that makes Frothy “Frothy”. 

Our Roastery Team - Coffee folks tend to be a passionate bunch, and our roastery team lives and breathes coffee. Led by Neal Russler, supported by Daniel Lopez (lead roaster), as well as our sales and production team, they continue to elevate and innovate our coffee program.

Allow us to introduce you to our Steeped’s Sunrise Coffee Pancakes – a breakfast marvel that effortlessly combines the timeless comfort of pancakes with the satisfying allure of coffee. Ready to electrify your morning routine?

Sunrise Coffee Pancakes

Ingredients:

  • ½ Cup Cold-Brewed Coffee, Chilled (start the night before)
  • 1 Cup All-Purpose Flour
  • 2 Tablespoons Sugar
  • 1 Teaspoon Baking Powder
  • ½ Teaspoon Baking Soda
  • ¼ Teaspoon Salt
  • ½ Cup Buttermilk
  • 1 Egg
  • 2 Tablespoons Melted Butter
  • 1 Teaspoon Vanilla Extract

Additional/Optional Ingredients:

  • Maple Syrup
  • Caramel Sauce
  • Chopped Pecans or Walnuts
  • Whipped Cream- or Coffee Whipped Cream-see recipe below

Instructions:

  1. Using Steeped’s Sunrise Blend, prepare a cup of Cold Brew by placing the Steeped bag in a mug and pouring 8 oz of filtered water over the top. Cover the cup, refrigerate, and allow it to steep for 12-24 hours.
  2. In a mixing bowl, whisk together the flour, sugar, baking powder, baking soda, and salt.
  3. In a separate bowl, combine the prepared cold-brewed coffee, and vanilla extract.
  4. Gradually pour the wet ingredients into the dry ingredients and gently stir until just combined. Don’t overmix; it’s okay if there are a few lumps.
  5. Preheat a non-stick skillet or griddle over medium heat. Lightly grease it with butter or cooking spray.
  6. Pour ¼ cup of batter onto the skillet for each pancake. Cook until bubbles form on the surface, then flip and cook until the other side is golden brown.
  7. Repeat with the remaining batter.
  8. Serve these coffee-infused pancakes warm with your favorite toppings, such as whipped cream, maple syrup, caramel sauce, or chopped nuts.

We've heard through the coffee vines that Goshen is fueled by an extraordinary female-led leadership team. How do these trailblazing women shape the company's roasting game and inspire the whole crew in a traditionally male-dominated industry? 

Goshen Coffee is owned by 2 couples who are family. Jennifer Hughey and Mike Bergen and Julie and Jay Beard. I am the CEO and have been in the CPG world my entire career and have been a part of many male-dominated industries, so this is not something new for me. However, it is one of the reasons we partnered up with my sister and Jay in 2020. I have always worked in male dominated industries where a lot of the time I was the only female at the table. I wanted to mix things up and create a culture where delivering the highest quality coffee and the most amazing experience was the goal of everyone who works here. I believe that the way to ensure this happens is to hire a diverse group of employee and always put their needs above anything else. If that is the focus then the rest will come…  

"Cultivate trade" has a pretty nice ring to it. Can you share more about what it means? How does Goshen go above and beyond to support their coffee growers and ensure they're not just breaking even? 

Giving GOod SHit ENergy starts with the relationship with our growers. We have tagged the phrase Cultivate Trade as it is a step beyond Fair Trade so that our growers are able to not only earn a fair wage but to reinvest back into their business.    

With over two decades of coffee expertise under your belt, what secret brew hacks and hilarious behind-the-scenes stories can you share from your journey in the specialty coffee industry? 

Well we have had many hilarious moments that is for sure but one of the funniest ones was two days before we opened our first cafe we discovered that we had misspelled the word coffee on our drive thru menu. Thanks to quick thinking by our graphic designer Sherrie, we were able to get that corrected and no one was the wiser, until now :)

Goshen's website mentions that you're a bit "crazy" (in the best way possible). Spill the beans on how your wild ideas, coffee-fueled creativity, and fearless spirit shake up the coffee world and make every sip an adventure. 

Well fueled by a lot of amazing coffee we are always looking to shake things up in the coffee world. We believe that our new branding introduced in 2022 has definitely done just that. We took a very boring white and black category and added a bit of color and creativity into every bag. Designed to designate roast level, the color pallet is very vibrant and memorable, just like our coffee.  

"Good shit energy" isn't just a slogan, it's a way of life. How do Goshen's coffee enthusiasts keep the energy levels high and the passion burning bright, even when the bean gods throw them a curveball? 

One of our core values is: TEAMWORK, have fun always, doing what we love.  So when we are thrown a curve ball we all work together and dig into that energy to get us through. We have a great team of dedicated employees not only in our roastery but also in our cafes.  

Two decades in the game is no joke. What's the secret behind Goshen's ability to stay on top of their coffee game, anticipate trends, and bring the wow factor to every cup? 

Goshen has been around for 20 years but in 2021 we hired Tony Auger who is a leader in the coffee industry to help us anticipate trends and bring that consistent wow factor to every cup. This includes blends that have been around for 20 years as well as new coffee’s that we continue to introduce. To validate that we are achieving this goal, we were awarded a Good Food Award earlier this year.  

Can you give us a sneak peek into the future? What exciting ventures or dreams does Goshen have on the horizon that will keep coffee lovers on the edge of their seats, eagerly reaching for their mugs? 

Well obviously our first line extension has been with Steeped and it is off to a great success in our largest trade partner Schnucks. We also reintroduced our Secret Stash line in 2023 to bring very small batch mind blowing coffee’s to coffee lovers across the country. We have a few other things up our sleeves in the next few months focused on different delivery methods for our cold brew as well as other line extensions to round out the Goshen offering.

Steeped's No-Churn Coffee Ice Cream

No-Churn Coffee Ice Cream

Ingredients:

  • 2 cups of heavy cream
  • 1 can (14 oz) sweetened condensed milk
  • ½ cup strong cold brewed coffee
  • 1 teaspoon vanilla extract

Instructions:

  1. Grab your favorite Steeped roast (we recommend our medium or dark roasts for best results) and a fresh mug. Place the Steeped bag in your fresh mug and pour 8 oz of filtered water over the top of the bag, saturating it fully. Cover the mug, place in a safe spot in your fridge and let steep for 12-24 hours. The longer you wait, the stronger the brew!
  2. In a large mixing bowl, whip the heavy cream using an electric mixer or stand mixer until stiff peaks form - this may take a few minutes.
  3. Gently fold in the sweetened condensed milk, chilled coffee, and vanilla extract into the whipped cream. Mix until well-combined. Be careful not to overmix as you want to keep the airiness!
  4. Pour the mixture into a loaf pan or an airtight container, then smooth the top with a spatula. Place the container in the freezer for at least 6 hours or overnight to allow the ice cream to set.
  5. Once the ice cream is fully frozen and has set, it's time to scoop up your ice cream and start celebrating your hard work! 

Whether you prefer to serve it in bowls, in cones, or go all out and dive straight in with your spoons (can't blame you there), the choice is yours! Feel free to add some extra love with toppings like chocolate chips, caramel swirls, or even crushed cookies!

We're about to spill all the tea on their queer-owned business journey, their two-wheeled adventures through their "Pedaling Peace" initiative, and how they're brewing up a storm to promote LGBTQ+ rights and equality. Peace Coffee's 'Pedaling Peace Initiative'

Can you tell us about Peace Coffee's journey and how it became involved in promoting sustainable and fair trade coffee? Our founding nonprofit, the Institute for Agriculture & Trade Policy (IATP), began to help American farmers during the 1980s farm crisis, and grew to partner and advocate for long-term systemic change and farmer profitability worldwide. IATP was a visionary partner for CEO and current-owner, Lee Wallace, and incubated Peace until it could stand on its own.

Peace Coffee, as we know it today, began in 1996. Fulfilling Peace Coffee’s mission isn’t just about purchasing certified fair trade coffee, but building direct and long-term relationships with small farmer cooperatives, and paying prices responsive to their needs. Strong, transparent, and long-term relationships are at the center of sustainable and meaningful impact. In 2022, we received a B Corp score of 118.7 – our highest ever and nearly double the average! Our score of 47.3 in the Community category accounts for the long-term, strong relationships we’ve built with our farmer partners.

In what ways does Peace Coffee support and empower coffee farmers and their communities? Peace Coffee believes wholeheartedly in the importance of being fair trade. We build long-lasting relationships and pay prices that are a direct response to the needs of the coffee farming communities. This means farmers and roasters can avoid international market prices that don’t reflect the true cost of labor and production.

We’re proud that 95% of our coffee comes from farmer partners we’ve worked with for 5 years or longer! And three of our partners have been with us for over 10, 15, and 20 years.

Could you share some of the initiatives and partnerships that Peace Coffee has undertaken to promote environmental sustainability? In 2017 we formed the Climate, Carbon, and Coffee Initiative with other like-minded coffee roasters. We invest 3¢ from each pound of coffee purchased to local initiatives to help farmers adapt to climate change.  Some of C3’s projects include replanting abandoned plots to create test farms and conferences for farmers to exchange new tools and techniques.

This year, during the month of April (Earth Month), we partnered with Grow Ahead, an organization that works to combat climate change and support communities through reforestation projects run by small-scale farmer organizations. For every order placed during the month of April, we planted one tree. Our efforts resulted in 4,124 coffee trees that helped support 200 farmers and 2,500 community members from the Association for Agricultural, Education, and Environment Coop in Brazil!

Looking ahead, what are Peace Coffee's future plans and goals in terms of sustainability, social impact, and supporting coffee farming communities? We seek to continue to pay our farmer partners a fair price for their coffee, and be in dialogue with them about what are the issues impact them the most and what can we do to help, and how we can best be a resource.

Can you discuss any challenges or triumphs that Peace Coffee has faced as a queer-owned business within the coffee industry? We’re more proud than ever to be queer-owned and woman-owned. We take pride in our rich and diverse queer community of staff and allies who help cultivate a more friendly, thoughtful, open-minded, and approachable world.

One of Peace Coffee’s core values is individuality, and we define that as, “We believe that organizations function best when they reflect more than one person or identity — much like coffee tastes best when it contains a complex array of flavors. We encourage all our employees to contribute their unique voices and styles to our operation, and we foster a workplace that is diverse, positive, respectful, and participatory.”

To do that, we must create a culture that welcomes diversity through inclusion and advocates for justice and equity in transparent ways that support our communities. We recognize that it takes ongoing work to achieve this and we want to continue this work intentionally and mindfully. To do this, in 2020 we formally launched a justice, equity, diversity and inclusion (J.E.D.I) initiative at Peace Coffee, which includes an employee J.E.D.I committee that will guide us in this effort.

In the words of our CEO, Lee Wallace, “In my 15+ years leading Peace Coffee, I have been privileged to be part of a community of passionate people that inspire me every day. In what ways does Peace Coffee use its platform to raise awareness about LGBTQIA rights and equality throughout the year, beyond Pride Month? We're committed to supporting LGBTQIA organizations that provide safe spaces for people of all ages, genders, and races, working tirelessly to spread kindness and create safe spaces in the face of hate and ignorance. We support these organizations, especially ones in our local community, like Reclaim and Quatrefoil Library, year-round.

Peace Coffee has a strong connection to bikes through its "Pedaling Peace" initiative. Can you tell us more about how this connection came about and its significance to the company? Bikes have been a part of our business since day one. Originally, we started bike delivering in the days before we could afford our delivery van and the practice stuck around.  We have two full- and one part-time bike delivery rider each hauling an average of 1800-2500+ pounds and clock around 70 miles per week. Our bike deliverers have made it through anything the Minnesota climate throws at them, rain, shine, or snow! It’s one of the most sought-after jobs in the company.

Also in much the same way that the work farmers put into growing coffee organically requires hand labor and serving as stewards of their land; biking is one way that we too can be stewards of our community, by cutting down on driving, using practical small scale tools like our bikes, to get the job done… and it's way more fun too!

In addition to biking being an integral part of our distribution system, we also give love to bikes by sponsoring a bike racing team. Currently numbering just over 50 people, we’ve been supporting (and caffeinating!) the team since 2006. Members of all ages, genders and abilities compete in a range of events, from Mountain biking, Cyclocross, Gravel, Road, Tri, Running, and even Cross Country skiing.

How can individuals or organizations get involved or support Peace Coffee's Pedaling Peace initiative and contribute to the promotion of biking and sustainability? We’re proud to see the number of companies (coffee, bread, honey & others) that are delivering by bike these days—it’s long been one of our goals to demonstrate that it’s a truly sustainable delivery system, for the planet and for the business. Of course we also support more people biking and advocating for better bike infrastructure on a local and national level. The League of American Cyclists is a great resource and advocacy group for more ways to get involved improving cycling for all.

Grab that “good ice” and savor the start of a new season with a glass of Steeped’s decadent Salted Caramel Cold Brew. Crafted with Steeped's California Blend in mind, this recipe brings together the smooth nature of cold brew and the luscious depths of salted caramel. And the best part? We're taking it up a notch with a frothy salted caramel cold foam, adding that extra touch of bliss. So, steep, chill, and revel in the flavors inspired by the sun-soaked days, beachside vibes, and the carefree spirit of summer!

Ingredients:

  • 1 cup of cold brew coffee made with California Blend
  • 1 tablespoon of caramel syrup
  • 1/2 cup of milk (or milk alternative)
  • A pinch of sea salt
  • Ice cubes
  • Optional: Caramel syrup for garnish

Instructions:

  1. Prepare the California Cold Brew by placing the California Blend Steeped Bag in a cup and pouring 8 oz of filtered water over. Cover the cup, refrigerate, and allow to steep for 12-24 hours.
  2. In the AM, make the salted caramel foam by combining caramel syrup, milk, and a pinch of sea salt. Using a handheld milk frother or a whisk, froth the mixture. 
  3. Assemble the drink by filling a glass with ice cubes. Pour the California Cold Brew over the ice and top it off with the salted caramel foam. If desired, drizzle caramel syrup on top of the foam.
  4. Enjoy!

What inspired the creation of Dark Pool Coffee and how did your passion for coffee drive its inception?

The idea started back early in our military careers. We treasured our times overseas and enjoyed the small moments with close friends over coffee. Drinking coffee was a way of connecting and getting through the day. When we started Dark Pool, we set out to find the best coffee and roasters to create amazing and unique blends. We wanted to produce smooth, enjoyable coffee to help bridge memories. And as we expanded, we realized we wanted our coffee to fuel entrepreneurs and anyone who goes out on their own to create something, whether it’s a business or a non-profit helping communities.

What role does community play in Dark Pool Coffee's mission, and how does the company actively engage with local communities?

Community is huge part of our mission. We locally roast our coffee beans in Texas, allowing us to support businesses in the area. We're proud to partner with our roaster, who is also a veteran, creating a veteran-to-veteran support connection. Whenever possible, we work with local vendors in our community, prioritizing those owned and operated by veterans. 

Are there any testimonials you can share about the impact Dark Pool Coffee has had on veterans' lives?

The Dark Pool x Steeped Packs give us the opportunity to share specialty coffee, especially when time is limited. There aren’t many luxuries when you are deployed and great coffee can go along way. Close friends of ours deployed overseas told us how our coffee helps them get through the day. Recently, we sent out about 200 Steeped Packs to a deployed friend, and the entire team was extremely thankful to finally have some great coffee. 

As Dark Pool Coffee has experienced significant growth in the specialty coffee scene, could you talk about the company's vision for the future and any exciting plans or expansions on the horizon?

We're excited about expanding our reach across the globe and providing our coffee internationally. Additionally, we plan to introduce new blends and collaborate with other veteran-owned companies. We’re also exploring locations for our initial flagship store which will be one-of-a-kind in our area. We're keeping the details a secret for now, but stay tuned.

Sustainability and ethical practices are increasingly important in the specialty coffee industry. How does Dark Pool Coffee incorporate these values into its operations and make a positive impact on the environment and communities?

When creating any blend, we prioritize understanding the coffee's origin. We conduct thorough research, delving into the importers and the farms themselves. Our goal is to support small farmers and their communities, promoting sustainable practices to help protect the environment. We ensure complete transparency in the sourcing and transportation of our products, guaranteeing that we and our customers know exactly where and how the coffee reaches them.

Happy Earth Day! As we celebrate this special day, it's essential to acknowledge our impact on the environment and take action to ensure that we are playing our part in safeguarding what remains. One simple yet effective way to reduce waste and our overall impact on the environment around us is through composting! While composting is probably a familiar term to most of you, we’re going to spend some time breaking down (pun-intended) the major themes of composting to really understand why it’s important and why compostability matters in your day-to-day products. 

First and foremost, “composting” is the process of breaking down organic waste into nutrient-rich soil, which can then be used to grow plants and crops. Because the process of composting enriches the soil it creates, it also reduces the need for harmful chemical-based fertilizers that tend to wreak havoc on our environment and our collective well-being. Just from its base definition, this process not only creates usable soil but also promotes a more sustainable and healthy approach to farming and gardening.

Now, let’s take it one step further. As Steeped enthusiasts, you already know that we are committed to ridding our landfills of harmful plastics and metals left behind by pods and unnecessary brewing machinery. But did you know that composting also helps to clear our landfills in an even larger way? Organic waste, (such as coffee grounds, food scraps, eggshells, sawdust, tree branches, etc.), can also clog up landfills and produce harmful greenhouse gasses such as methane, furthering the long-term damaging effects of climate change. The composting process avoids producing these harmful gasses with the presence of oxygen, essentially banning methane-producing microbes from latching onto the scraps. The benefits of composting are much too exciting to ignore and when you’re able to incorporate compostability in more areas of your life, the impact you have on protecting our environment skyrockets.

Coffee is one of the most popular beverages in the world, with an estimated over 2 billion cups consumed every day. It's not just a drink, but a culture, a way of life. And for Kahawa 1893, it's a path forward for women in the industry. In honor of Women’s History Month, we’re proud to feature our partner, Kahawa 1893, for the efforts they continue to make in supporting women within the coffee industry.

Founded in 2017 by Margaret Nyamumbo, a third-generation Kenyan coffee farmer, Kahawa 1893 set out on a mission to showcase the rich heritage of African coffee and to empower the women who produce it. Rooting itself in these two core values, Kahawa 1893 has built a business model that allows them to work directly with local women farmers in Kenya, Rwanda, and Congo while also inviting their customers in on the process via a “tipping” program where customers can tip the farmers directly via their website or a QR code on every coffee bag. Each tip is matched dollar-for-dollar by the company, further encouraging a strong connection between farmers, roasters, and consumers.

You might even recognize this featured partner from a recent episode of Shark Tank where multiple Sharks vied for a chance to invest in this game-changing business model that not only paves a way for women farmers in the coffee industry, but for women entrepreneurs everywhere. After ultimately striking a deal with Emma Grede, CEO and cofounder of Good American and founding partner of Skims, Kahawa 1893 is continuing its journey to providing sustainable wages for women coffee farmers and celebrating the rich history of African coffee. 

Kahawa 1893 offers a range of coffee blends, each with its own unique flavor profile. Our personal favorite and the company's signature blend is the Safari blend, made with beans from Margaret Nyamumbo's family farm. The blend is best described as having a bright acidity with notes of blackcurrant and chocolate, leaving you wishing ever so slightly for the next sip.
